Bergamots come and go in a heartbeat. This year, as I do every year, I snapped up as many as I could get my hands on, and sliced, diced and simmered them into this unbelievably fragrant marmalade. To counteract the intense perfume of the Bergamot, I added a bit of Meyer lemon. The combination is bitter, tart, tangy, floral and bright with citrus at its complex best.
