Attika Cherry & Juniper Jam
As much a conserve, a confection, a true preserve as it is a jam—perhaps more so. For some reason, I can't bring myself to chop, blitz or otherwise destroy the ruby round beauty of a fresh cherry. So, instead, I pit them and simmer them in their wholeness with cane sugar and lemon juice and (this time, for the first time) a handful of juniper berries—a whisper of otherness. Black cherries in their juice, distilled into toothsome baubles in a syrup of their own making. I suggest spooning this one over ice cream, or perhaps mixing up into a simple gin cocktail.
